Kerala Korma

I discovered this wonderful take on the classic korma in the hills of Kerala in South India. When I was young, my parents often fed me and my siblings kormas, a mild curry, as a way of ’breaking us in’ to the delights of more heavily spiced curries. As my taste for all things spicy grew, I left this introductory curry behind and moved on to a new world of curried delights. This modern recipe is definitely a reason to revisit the korma. Fresh, savoury and with a background heat from the chil
