This highly adaptable recipe was discovered in a collection of recipes assembled by Johannes Reisner of Hereford, Berks County, during the 1860s.7 It will work with any type of cooked meat as long as the meat weighs exactly 4 ounces (125 g). Otherwise, the dumplings will fall apart.
