Ingredients: 6 garlic cloves; 100 g peanuts; 80 g Montgomery cheese, thinly sliced; 400 g fine beef mince (15% fat); 280 g demerara sugar; 1 tsp freshly ground coriander seeds; 2 pickled guindilla peppers; 1 tsp smoked paprika; 600 g red onions; 1 tsp bottarga; 1 kg plum tomatoes,; 2 medium-hot red chillies; 1 large Bramley apple,; zest and juice of 1 lime; 2 garlic cloves; 100 g basic mayonnaise; 2 beef fat dripping rolls (or shop-bought brioche buns); 4 medium baby gem lettuce leaves; vegetable oil, for frying; 180 g good quality red wine vinegar

Over the last six years, Shaun has done various trips and challenges to raise money for Action Against Hunger, the charity that helps save the lives of malnourished children around the world. He came up with this burger as part of the fundraising for a six-day cycle ride in Myanmar. For every Burma burger sold £2 went to charity. They flew out. The chutney makes more than you need for two burgers but unopened
