Method

Preheat the oven to 150°C (300°F/Gas 2). Place the almonds on a baking tray and roast in the oven until golden brown. Remove and set aside. Put the sugar in a small heavy-based saucepan and add enough water to just wet the sugar. Place the saucepan over high heat and turn the sugar int
