Versatile, crisp, golden puff pastry filled with well-seasoned sausage mince. Sausage rolls are a light luncheon or picnic dish with salad or a lunch-box standby. Mini sausage rolls would make elegant cocktail savouries for special occasions.

Ingredients

  • 10 g (¼ oz) unsalted butter
  • 2 French shallots, finely chopped

Method

  1. Melt the butter in a frying pan and add the shallots. Cover and cook over moderate heat for 5 minutes, or until softened. Remove from the pan and allow to cool for 5 minutes. Put the sausage mince in a bowl and add the shallots, mixed spice and parsley. Season with salt and pepper, and mix well. Roll the sausage mince out with well-floured palms on a well-floured surface
