Cook the ham as above; remove the rind and a good part of the fat, and place the ham in a baking tin. Moisten with Madeira wine and cook for 30 minutes in a hot oven (450°-M7), basting frequently with Madeira. The ham will take on a good colour. Serve with Madeira Sauce.
