Why These Flavors Work

Watermelon’s sweetness is enhanced by two other tastes/flavors: the acidity of the lime and the salt. Lime and watermelon are very often seen together, and the extra-virgin olive oil is used to wrap all of those flavors together.

Plating Procedure

  1. Place the pressed watermelon on the plate.
  2. Place a rectangle of the sweet lime jelly directly over the watermelon.
  3. Put 2 g/.07 oz of black sea salt on the right side of the watermelon.
  4. Zest one-eighth of a fresh lime over the left side of the lime jelly using a rasp (Microplane).
  5. Drizzle a few drops of extra-virgin olive oil around the jelly (about 3 g/.1 oz). Serve.
