These fruity sweets are traditional French pâte de fruits: soft and yielding sugar-coated jellies that are often for sale at Christmas time. Made with natural, all vegetarian and allergen-free ingredients but packed full of intense fruity flavour, these jellies make a wonderful after dinner sweet or a gift for any occasion.

Ingredients

  • 500 ml pure pomegranate juice
  • 1 lime, juiced
  • 75 g

Method

  1. Line a 20 cm square baking tin with parchment paper.
  2. Pour the juices and syrup into a deep saucepan. Stir the pectin powder into half of the sugar, then sprinkle this over the juice and stir while heating gently until the sugar has dissolved.
  3. Add the rest
