For the Watermelon

  • 30 2.5 cm x 2.5 cm cubes of fresh watermelon

Method

Place the watermelon in a sous vide bag along with the verjus and white wine vinegar. Compress on full and leave in the bag until needed. Season with a little salt just before serving.
