Steps in the Creaming Method for Cookies

It is extremely important that the butter and eggs are completely at room temperature before mixing.
  1. Beat the butter and sugar together on medium speed with an electric mixer. For dense and chewy cookies, cream for about 1 minute, and for fluffier cookies or to encourage more spreading, cream for 2–3 minutes.

  2. Add the extracts, and then the eggs, one at a time, and beat on medium/low speed until incorporated before adding the next. It can cause your mixture to break if you add the eggs too fast.

  3. Whisk together all of the dry ingredients in a separate bowl until well combined.

  4. Add the dry ingredients into the creamed mixture and mix on medium/low speed until just incorporated.

  5. Fold in mix-ins if using.

  6. Transfer the dough to your prepared baking pan and bake.
