Adding fermented veggies to raw leaves will take your salad to another level in terms of both flavour and health benefits.

Sauerkraut is perfect as part of a sandwich filling, adding nutritious crunch and flavour, and to make it more digestible. And salads without sauerkraut are missing something in my opinion. These are great ways to first introduce sauerkraut to someone that is not a fermented food convert already. Start with a little bit if you are not sure and add more when you get used to the different tastes. The juice from your sauerkraut, kimchi or pickles can also be used in a salad dressing. You never have to waste any of your ferment.
