Mum usually has five different types of chutney in the fridge, or at least the ingredients to rustle one up quickly. Growing up, my least favourite job was preparing garlic for Lasan ni Chutney. I would come home from school to a sack of garlic and, much to my protests of too much homework, I was set to work peeling and pounding. We didn’t have an electric mixer in those days so we pounded the garlic by hand before expertly adding the right measures of chilli powder and salt.
