The Chinese were among the earliest peoples to domesticate fowl and, in some rural farmhouses, you can see an exotic, black-skinned breed of chicken covered by wispy white feathers. Even today, people regard this breed as having special nutritional qualities for new mothers to regain their strength after childbirth.

Many chicken dishes achieve exquisite flavour from the aromatics, wine and chillies that are used in cooking. Spicy chicken dishes such as Kung Po Chicken and Chilli Chicken are perfect examples of supremely tasty western Chinese cooking. Kung Po is attributed to a governor of Sichuan in the late Qing dynasty, Gong Bao. Interestingly, its name had to be changed when it incurred the wrath of Cultural Revolution radicals, but today, you can find Kung Po sauce in supermarkets all over the world.
