The rule about drink, as about food, is do what you like and try out new combinations. All that matters is that you please yourself and your family. Christmas is a time when most of us buy more drink than usual, and it is a special treat to serve a number of different wines with a meal. Christmas is one time you can do it without having expensive bottles left over, because you can as easily serve six people with a different bottle for each course, as three bottles of the same wine, which may go well with the turkey, but will taste a bit odd with the first courses, or the Christmas pudding. Here are a few ideas. I have just mentioned the type of wine I think goes well with each dish. Obviously, how good a wine you buy of each kind is a matter of choice.
