Named for their pretty fan-shaped shells, scallops are bivalve molluscs found throughout the world’s oceans. There are more than 300 species, varying in size from the large Atlantic deep-sea scallops to the smaller bay and queen scallops. The scallop enclosed within the shell, including the orange or pinky red roe (the coral or tongue), is edible.
