Choux-Fleurs — Cauliflower; Brocolis — Broccoli

  • About
Broccoli differs from cauliflower by the colour of its flowers which are a deep violet and also in the arrangement of the flower which is not so massed as the curd of the cauliflower.
English broccoli never attains as large a size as the French varieties of the Midi; some of them do not even form a head, the flowers being only the size of a hazelnut and widely distributed in the interstices of the leaves.
The following recipes are equally suitable for cauliflower and broccoli.
