Country women long have served asparagus with chicken in special-occasion meals. But we found one farm woman who teams chicken and the green spears in an elegant main-dish pie that her guests praise.

With her Farmhouse Asparagus Pie, she often serves a generous mixed fruit salad in lettuce cups with hot tea or coffee. This 3-piece meal satisfies and it’s no trick for the hostess-cook to have everything ready in advance.

By using a 10" pie pan, you get eight good servings. You can use a 9" X 9" X 2" pan and pastry for a 2-crust pie, but it’s more difficult to fit the pastry into the square pan.
