Chinese and Southeast Asian pasta is delicious hot or cold. When you make up the noodle dishes in this chapter, prepare them in basically the same way you would prepare hot noodles. The noodle recipes here are a sampling of my own favourite cold noodle delights. They are ideal for simple buffets and picnics and are more than merely adequate alternatives to hot pasta or noodle dishes.
I include here Spicy Black Bean Sauce Noodles and Cold Sichuan Noodles, which reflect the hot and spicy Chinese style, and Southeast Asian Noodle Salad and Cold Curry-Flavoured Noodles, which deliciously show the creativity of other regional styles. Because cold temperatures affect the potency of spices, it is best to experiment with these recipes to reflect your own personal preference.
