Fried and Filled

The Campania region in and around Naples, Italy, is known for its fried foods and its enormous calzones. Thanks to the Italian diaspora around the turn of the twentieth century, these close relatives of classic pizza have gone global, too. In this chapter, we offer up several gluten-free options, ranging from a fried montanara pizza crust to oven-baked calzones and handheld pizza pockets.
