Pesto is commonly known as the wonderfully pungent basil sauce that hailed originally from Genoa, Italy. When freshly made, its fragrance and taste is powerful and intoxicating, hence its popularity and widespread use in everyday cooking. The word ‘pesto’ refers to the method of preparation, where the ingredients are pounded together by hand in a mortar and pestle to make a paste. This time-consuming but rewarding process has been largely replaced by the mechanical food processor, making it a quick and simple task.
