Bread is the staff of life, part of our historical development and a mainstay of our modern diet, offering roughage, energy, flavour and sustenance and acting as a carrier for other foods. The breaking of bread at the table symbolises a bond of friendship, giving and generosity. The making of bread is a comforting and empowering one, a response to some primal urge and a skill too often overlooked and ignored in our acceptance of the instant and the immediate. To understand and practise the art of breadmaking is to have a close relationship with a necessary food source and its preparation is an act of providing for our wellbeing!
