I have gathered these recipes under one ‘umbrella’, simply because there are too few to stand on their own. They make an interesting end to this little book.
While all pasta salads are modern and, however delicious they may be, are rather looked down on by Italian purists, a few sweet pasta dishes have been part of regional cooking for centuries. They have, alas, lost popularity during this last century and are seldom prepared nowadays. I hope you will try the two recipes I have included and think, as I do, that they are worthwhile additions to your pasta repertoire.
