Iced desserts were introduced to Spain by the Moors, who also created luxurious dishes of fruit in syrups. Caramel is a much-loved flavour and is used in a winter fruit salad of oranges and a drunken cake soaked in brandy. Custards are also popular and come with a crisp caramel topping or baked with a caramel syrup. As well as desserts there are delicious pastries and cookies, light breakfast rolls and solid, satisfying loaves baked with barley and brown flour.
