If there are any vegetarians reading this, now is the time for you to go and walk the dog, because this chapter is all about meat. It’s for committed carnivores only. So think of this as the X-rated part of the book.

Most of the recipes are lamb-based, but I have also added beef and a venison dish. As in Britain, venison is not standard fare in India, but it is available. However, if you happen to spot a passing deer just consider how delicious it could be on your plate. Forget all images of Bambi.
