Unexpected guests are always welcomed with coffee and cookies in Scandinavian homes. That’s the reason most of their cookie recipes make many dozens of cookies. A variety of rich buttery cookies are always ready for unplanned company.
Most cookies are baked on ungreased baking sheets because the butter in the dough prevents them from sticking. Only grease baking sheets when it’s specified in the recipe or the cookies may spread too much. Use parchment paper to line the baking sheet for easy clean-up, using the paper several times.
