Crab has to be the most undervalued shellfish in the UK. It’s delicious, but the mess and faff of cooking it must put people off, which is actually pretty understandable. We buy brown Atlantic crab, caught out in our Scottish seas. There are two types of meat in a brown Atlantic crab. There’s the white meat, which is flaky and delicate in flavour, and you want to be gentle with it as it’s easily overpowered. Then there’s the brown meat which is the total opposite and has a mushy texture and a strong flavour; some people love it and some loathe it! It’s worth finding out which side you’re on.
