Both Myrtle Allen and I are interested in collecting traditional Irish recipes which we believe should be saved from oblivion while there is still time. Sometimes they can be difficult to find: people may have cooked from instinct, putting in a fist of this and a pinch of that, or they may have begun to lose confidence, feeling that in some strange way their old-fashioned, home-cooked food was inferior to newer foods bought in tins or packets. I urge you to record your grandmother’s and great-grandmother’s recipes before they get lost, no matter how simple they appear.
