It has been an amazing journey discovering how many delicious salads are possible, especially coming from a place where I believed the stock standard garden salad was the only option. You can add so much depth and dimension to a fresh bowl and there are always more combinations and flavours to explore. It’s just about knowing what ingredients will balance and complement one another and, of course, it’s all about experimenting.
Don’t stop at ingredients; make sure you play around with different dressings and textures. A dressing can truly make a salad and it certainly doesn’t have to be sweet and unhealthy to be good. Adding olive oil and lemon juice can lift the flavour profile of a salad and they’re also good for you. Simply adding a tablespoon of apple cider vinegar can be enough as a dressing. Contrast cooked and roasted with fresh and crunchy.
