Sweet on Semolina

 

Some time ago, I invested in a big bag of semolina. I bought it primarily to make my mother's version of "kesari", an unctuous, buttery Indian pudding studded with sultanas and roasted cashew nuts. But now, the big bag of semolina (minus a couple of cups) is fast approaching its "best before" date. I am determined to transform every grain into a delicious dessert before the trash can beckons...
