John Ashburne is an award-winning writer, editor and photographer who has lived in Japan for 28 years. He has written on Japan and its Food Culture for a host of international publications including Lonely Planet, Wall Street Journal, Forbes, Vogue E&T, The Japan Times and Gourmet Traveller. He was also Guest Editor for the recently published Kyoto Journal special issue, 'FOOD'. He lives in Kyoto where he ferments vegetables in rice-bran and extracts elixirs from seaweed and fish shavings.
