Junya Yamasaki was the founder and head chef of Koya for 5 years. He started Koya as a simple Udon Noodle restaurant in the year 2010, then gradually grew reputation and the cult status of the most original and creative Japanese restaurant in London while developing the idea of integrating technique and philosophy of Japanese cuisine into British soil. He closed Koya in the end of May 2015 in its peak and returned to Japan. Now he is re-studying culture and history of Japanese cuisine there.
