I love pairing chipotle (a smoked jalapeño) with bacon for a double dose of smoke and to add a touch of heat against the natural sweetness of pork. The citrusy slaw adds crunch and much-needed freshness and acid, which all smoked meats benefit from. Feel free to use store-bought bacon; just season it with a few sprinkles of the Chipotle Rub and bake it according to the directions. It will still be delicious, I promise.
Heat a grill to high or a grill pan over high heat on your stove. Grill the bacon until golden brown and slightly charred on both sides, about 1 minute per side.
Put the warm tortillas on a flat surface. Put a slice of the grilled bacon in the center, top with a large spoonful of the slaw, a generous drizzle of the mayonnaise, and a squeeze of lime. Roll and eat!
