I love pairing chipotle (a smoked jalapeño) with bacon for a double dose of smoke and to add a touch of heat against the natural sweetness of pork. The citrusy slaw adds crunch and much-needed freshness and acid, which all smoked meats benefit from. Feel free to use store-bought bacon; just season it with a few sprinkles of the Chipotle Rub and bake it according to the directions. It will still be delicious, I promise.</
