  • 95 g sherry vinegar
  • 75 g

Method

Place the water, sherry vinegar, sugar and agar in a small pot and bring to a boil, continuously whisking. After 2 minutes, pour into a small container to set at room temperature — it should set up within 30 minutes. Turn out the jelly and cut into small 5mm dice ready to serve.
