For the dough

  • 240 g cañihua flour
  • 380 g plain flour, plus extra to dust

Method

Step 1: For the dough, add the flours, salt, sugar and the butter into the bowl of a mixer fitted with the hook attachment. Mix for 2 minutes before adding the water. Once a dough is formed, wrap the dough in plastic wrap and place in the fridge for 20 minutes until completely chilled. Preheat the oven to 160°C
