For the Wood Pigeons

  • 10 juniper berries
  • 5 sprigs of pine
  • 5 sprigs


Place the aromatics in a dehydrator at 55°C for 4 hours. Grind to a powder and mix into the butter. Divide between the 5 birds stuffing it into the cavity. Place the birds separately into sous vide bags and compress on full. The birds are cooked at 60°C for 30 minutes
