  • Carrot juice 50 ml

Method

Carrot puree

Grate the carrot, finely cut the garlic and fry in olive oil with lemon grass for 20 minutes, stirring occasionally. Add the carrot juice and slightly reduce. Mix everything in a blender, adding cold butter and cream. Season with salt and sugar.
