Carrot puree

  • Carrots 300 g
  • Carrot juice 50 ml
  • Garlic


Carrot Puree

Grate the carrots, finely cut the garlic and fry in olive oil with the addition of dried basil. Fry for 20 minutes, stirring occasionally. Add the carrot juice and let it reduce slightly. Place everything in a blender, add cold butter and cream and whisk. Season with salt and sugar according to taste.
