Treacle is the liquid collected at the end of the sugarcane refining process. Black treacle is the darkest and has a burnt, almost bitter taste. Light treacle, known as golden syrup, is the lightest and is sweet. In America, treacle is known as molasses, the darkest being blackstrap molasses. Treacle is used in baking: dark treacle adds flavour and colour; golden syrup is milder. Treacle puddings and tarts use golden syrup and a little dark treacle to get a balance of sweetness and flavour.
