Baked as a single giant cookie in a square or rectangular pan, bar cookies are cut into portions after being baked and cooled. They may be made from rich cake batters as in the case of brownies, perhaps the ultimate bar cookie. Or they may be a thin layer of a dough or cake batter with a rich topping, often containing nuts.
Practical when you need to prepare a lot of cookies with a minimum of effort, they may be cut into squares, rectangles, or diamonds.
