It is essential to choose the right type of rice for the preparation of Riz Pilaw and Risotto. Patna or long grain rice is preferable for Riz Pilaw although if not available, Carolina type can be used instead. Carolina rice is the most suitable for sweet dishes and salads.
Italian rice in particular the Piedmont variety, is the most suitable for the preparation of Risotto.
