The single greatest invention of the twentieth century? Easy. There is no contest. Eggs Benedict.
Leave aside the fact that it’s a fantastic combination of ingredients, someone somewhere, a true hero of the century said:
‘Eggs and bacon are a marriage made in heaven’s kitchen. They are unimprovable, so I will improve them.’ From such hubris, genius is born.
Add an English muffin. (Why English? Has anyone ever seen a German muffin or even a Nicaraguan one?) And hollandaise sauce, which is a tricky balancing act. Do I want hollandaise on an egg? A rich butter sauce with added egg yolk?
