  • About

In New York City, the term grandma pie signifies a certain kind of pizza. Depending on which origin story you believe or who makes your favorite “grandma slice,” it can mean different things in terms of slice height or proofing times.

Exact thickness doesn’t matter. Shape doesn’t matter. What kind of pan? Whatever shape pan you have. Whatever shape pan your grandma has.
Grandma pizza is in the spectrum of Sicilian pizza, just like Detroit-style pizza is. To me, these pan pizzas are all in the category of Sicilian Grandma. A pizza brought to America by Sicilians, and grandmas.
