Here are a few sweet little gems, in tribute to the love of sweet things I found in the land of smiles. You may have read that a traditional Thai meal does not include a dessert course in a Western sense. This is not because Thais do not cherish sweets, but because they enjoy them throughout the day. Thais see no reason to wait until the end of a proper dinner to indulge in sweet pleasures. They snack on sweet things from dawn until well past my bedtime, tucked in between plates of rice and bowls of noodles. Why try to pack in a piece of pie and coffee after a meat-and-potatoes meal? It is inspired, like the custom of tea in the United Kingdom.
