Bourekas are savoury pies made with puff, phyllo or shortcrust pastry and filled with mushrooms, cheese, potato, spinach or aubergine. They originally came from Turkey and Greece but you find them all over Israel in various sizes with the kind of seed sprinkled over the top indicating what filling is inside.
At Sababa we make mini bourekas, which are called bourekitas and the best way to enjoy them is with a beer or an aperitif. It doesn’t matter who comes over, it’s one of those things everybody loves so you can never have enough stored in your freezer!
