Celebrating New Potatoes


Spring's first potatoes are tender little nuggets of joy. Their flavor is subtle, their texture gently waxy, so it's best to give them a light touch when cooking to allow their character to shine through. Enjoy them while they last (they're in season from April to July in the Northern Hemisphere) in dishes such as New Potatoes in Yogurt Sauce and New Potatoes in Persillade (garlic and parsley sauce).
