12 Ways With Gnocchi

Gnocchi are pasta's pillowy cousin. These little dumplings can be made from wheat, maize or potato flour, or there are varieties incorporating cooked vegetables such as squash, beetroot or pumpkin. Try serving them simply baked as in Gnocchi alla Romana. Boiled or fried, they also make a great base for a wide range of sauces.
