Shoestring Sweet Potatoes


  • 1 large sweet potato, peeled
  • 2 quarts peanut or vegetable oil


  1. Heat the oil to 350°.
  2. Using a mandoline or sharp knife, cut the potatoes into very fine julienne matchsticks.
  3. Sprinkle the julienned potatoes into the hot oil and stir, allowing them to cook for 20 to 30 seconds.
  4. Using a mesh dipper or slotted spoon, remove the potaotes from the oil and drain on paper towels.
  5. Sprinkle with salt to taste.
