Bacon, always the bridesmaid and never the bride. At BarBacon, I’ve been trying to change that. Bacon is no longer the favorite side dish, but rather the dish itself. In the first half of this chapter, we’ll explore bacon’s layers, its flavors, its textures. We’ll use it in traditional recipes to amp up the familiar. We will reintroduce you to your classics, to your go-to comfort foods, like mac and cheese (where I add bacon three ways), adjusted and reinterpreted and made new with bacon as the star. Classics like this should serve as a gateway drug, building your confidence and showing you what you can really do with bacon. Once you know just how awesome it is beyond breakfast, you can start to really experiment like I do.
