I’m incredibly fond of both tofu and eggs, and in Asian cooking there are many delicious recipes that involve both of them. They are usually simple dishes and, importantly, make a quick meal with great flavour, texture and a good protein base — just as importantly, they are very inexpensive. Tofu and egg dishes are great to make alongside a beef, pork or seafood dish — just add a salad and you have a shared table. They are also ingredients that I have noticed are often sadly forgotten by the home cook.
