This chapter includes some showstopping recipes, but as you will see they are mainly chicken and lamb curries, with just one pork dish. You will also find a chicken liver curry, which I promise is nothing like the dreadful liver that haunted so many childhoods in this country. It is a great dish so I hope that many of you will try it. You will notice there are no beef curries. I rarely eat beef these days so wanted to show you the curries that I cook, that work and that you and your family and friends will love. For those who are vegetarian and vegan, please follow these recipes and simply substitute the meat with paneer, tofu or cauliflower. Fry them lightly in a little oil first to bronze before adding them to the gravy later.
